Water Activity in Cannabis Flower

Use of water activity to control drying, microbial growth potential, packaging and stability in cannabis flower.

Overview. Water activity measures the water available to support chemical reactions and microbial growth, rather than total water content. For dried cannabis flower, it can provide a more direct indicator of microbiological risk and storage stability than moisture content alone.

Water activity versus moisture content

Moisture content measures total water, while water activity reflects the energetic availability of that water. Two samples with similar moisture content can have different water activity because of composition and binding.

Drying endpoint

Water activity can support determination of a reproducible drying endpoint. Sampling should account for variation between flowers, trays, rooms and container positions.

Microbiological interpretation

Lower water activity generally limits microbial growth, but it does not prove absence of contamination. Organisms and spores may remain present even when growth is restricted.

Measurement controls

Instruments require calibration with certified standards, temperature equilibration, clean sample cups and sufficient sample volume. Volatile compounds can affect some sensor technologies.

Packaging and moisture migration

Packaging can allow moisture gain or loss over time. Stability programmes should trend water activity alongside moisture content, microbiology and package integrity.

Specification setting

Limits should be justified using product characteristics, process capability, microbiological risk and stability data. A universal cannabis limit may not suit every product.

Investigation of atypical results

High or variable results may indicate uneven drying, rehydration, package failure, sampling error or instrument issues.
